Add a zesty kick with this delicious and easy-to-make Chili Lime Chicken recipe. Made with fresh lime juice, and chili powder, this flavorful dish is perfect for a quick and healthy meal option.
Ingredients
1/4 cups Red Onion, chopped
2 Cloves garlic, minced
2 Jalapeño peppers, minced
1 Lime, juiced and zested (about 1/4 cup juice and 1 teaspoon zest)
2 tablespoons Fresh cilantro, minced
1 teaspoon Kosher Salt
1 teaspoon Fresh cracked black pepper, course grind
1 teaspoon Chili powder
1 teaspoon Cumin
1/2 teaspoons Ground coriander
1/3 cups Olive oil
3 pounds Boneless, skinless chicken thighs
Instructions
Add all ingredients, except chicken, together in a bowl or bag for marinating. Mix well.
Add the chicken and marinate in the refrigerator for at least one hour. (Max of three hours)
Preheat grill on high and grill the chicken for about 2 minutes per side, or until nicely charred.
Move chicken off of the heat and close the lid. Cook until the chicken reaches an internal temperature of 165° F / 74° C
Rest the chicken for 8-10 minutes before cutting or serving.
