Lemon Garlic Chicken

Ingredients
  • 1 Lemon, juiced and zested (about 1/3 cup juice and 1 teaspoon zest)
  • 2 Cloves garlic, minced
  • 1 tablespoon Fresh rosemary, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 1/3 cups Olive oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Fresh cracked black pepper
  • 3 pounds Boneless skinless chicken thighs
Instructions
  1. Add all ingredients, except chicken, together in a bowl or bag for marinating. Mix well.
  2. Add the chicken and marinate in the refrigerator for at least one hour. (Max of three hours)
  3. Preheat grill on high and grill the chicken for about 2 minutes per side, or until nicely charred.
  4. Move chicken off of the heat and close the lid. Cook until the chicken reaches an internal temperature of 165 F
  5. Rest the chicken for 8-10 minutes before cutting or serving.
  6. Serve with fresh sliced lemon and Italian parsley.
