2 tablespoons Favorite BBQ rub (view our Sanch Rub recipe, it's a good one)
1 tablespoon Avocado oil (Can sub for another oil, avocado is my preferred cooking oil.)
Instructions
Generously season your pork on all sides with BBQ rub. Place uncovered in the refrigerator for 1 hour
Preheat your smoker to 200° (an oven will work in place of a smoker but you lose A LOT of flavor if not smoked. Just sayin)
Smoke your pork chops until an internal thermometer reaches 125° (about 1.5-2 hours), let them rest for 5 minutes
While the chops are resting, heat up a cast iron skillet over medium-high heat (any heavy bottomed skillet will do, but you’ll get the best crust with cast iron)
Once the pork is done resting and the skillet is fully heated, add the avocado oil and let it heat up for about 20 seconds or until the oil is shimmering
Sear the pork chops in the heated oil for about 1-2 minutes per side or until a nice brown crust has formed. Keep flipping and cooking for 1 min at a time until beautiful crust is done. Remove to a plate, cover with foil and rest for 10 minutes
